Casa Andes was born from a deep reverence for Ecuador — its land, its people, and its extraordinary cacao. Ecuador is home to some of the world's most prized cacao: Fino de Aroma, a variety celebrated for its complex floral, fruity, and nutty notes. It is not just an ingredient to us. It is a living lineage — a thread connecting generations of Ecuadorian farmers, traditions, and culture that we are honored to carry forward.
From Bean to Bar
We are a true bean-to-bar chocolatier. That means we oversee every step of the journey — from sourcing raw cacao beans directly from Ecuadorian growers to the moment a finished bar reaches your hands. Nothing is outsourced. Nothing is rushed.
Our process begins with carefully selected cacao beans, chosen for their origin, flavor profile, and the integrity of the farms they come from. We roast, crack, winnow, grind, conch, and temper each batch by hand — a labor-intensive process that allows us to coax out the full depth of flavor that Ecuadorian cacao has to offer.
Small Batches, Intentional Craft
We work in small batches — always. Not because we have to, but because we choose to. Small-batch production means we can give every bar the attention it deserves. It means we can taste, adjust, and refine. It means quality is never sacrificed for quantity.

Meet Roxana & Gabriella
Casa Andes was founded by Roxana Roman and her daughter Gabriella, whose passion for Ecuadorian cacao and dedication to the craft of chocolate-making is at the heart of everything we do. For Dora, making chocolate is an act of love — for Ecuador, for the art of fine confection, and for the people who will ultimately enjoy it.
